Chicken Stew
- 2 cans Mixed Vegetables
- 1/2 cup Chopped Onion
- 1 box Chicken Stock 2 lb
- 1 can Whole Peeled Tomatoes 28 oz
- 1/2 tbsp Italian Spices Blend added to boiling chicken
- 2 - 3 large Chicken Breast (boiled with italian spices and shredded)
- 1/2 cup Jasmine Rice
- 1/2 tsp Salt
- 1/2 tsp Black Pepper
In a large pot over medium-high heat, combine chicken, mixed vegetables, onion, salt and pepper. Puree tomatoes in blender and add to pot.Bring to a boil and reduce heat. Simmer 45 minutes. Add rice and simmer for an additional 20 minutes. Remove from heat and serve.
